Huckelberry Heavan

Several weeks ago, I promised you a recipe. Huckelberry Heaven is my latest cake creation, and it truly is HEAVEN. The recipe is below:
1 Vanilla Cake Mix, 1 small box vanilla instant pudding, 3 eggs, 1/3 cup vegetable oil, 1 1/4 cup water. Mix all ingredients until well blended and pour into three 8 inch cake pans. Bake at 350 until just done (insert toothpick and when it comes out clean, cake is done). Cool cakes and then wrap in saran wrap and freeze. Frozen cakes are much easier to decorate. I always bake the cakes the evening before I decorate them.

Huckelberry Filling
2 cups huckelberries, 1/3 cup sugar, 1 1/2 cups water, 2 tsp corn starch. Put all ingredients into sauce pan and bring to a boil over medium heat. Cook until sauce begins to thicken.

1 pint HEAVY whipping cream, 4 tbsp powdered sugar, 2 tsp vanilla. Whip until very firm.

Assembling the cake: Place one cake on plate and spread a thin layer of huckelberry sauce over entire top of cake… second cake on top of huckelberry layer and repeat. Put third cake on top. Frost sides of cake with whipping cream frosting. For the top of the cake I spread the huckelberry sause over the entire top and then using a star tip and a pastery bag I cover the sides of the huckelberry layer with frosting stars. I also put a star border at the bottom of the cake. For added effect put fresh huckelberries around trim on top and bottom.
Chill cake in the fridge and enjoy.
